About this wine

Grapes

Sangiovese. I.G.T. Toscana Rosato.

Vinification

Fermentation takes place under temperature control in 20 hl stainless-steel vats.

Ageing

The wine matures for five months in 20 hl stainless steel, followed by at least one month in bottle before release.

Tasting profile

The colour combines new-copper, melon and raspberry-pink tones. Redcurrant and red apple lead the aroma profile, developing towards medlar. The palate opens with wild strawberry, followed by giuggiola and a salted-caramel note in an almost marine finish. Fresh acidity, precise fruit tannin and good length culminate in a pleasantly dry conclusion.

Serving and pairing

Serve at 10–12°C. Pair with cicchetti and aperitivi, Parma ham, salads—especially Niçoise—grilled chicken, pork or fish, crustaceans, fish soup, raw sea urchins, and spicy Oriental or Middle Eastern food.

Label / history

Jaspidem is the Latin term for jasper, one of the oldest known gemstones. Its colours range from bright green to red and sandy pink, while its traditional symbolism connects it with grounding, nurturing qualities and the earth.
