Sangiovese. I.G.T. Toscana Rosato.
Vinification
Fermentation takes place under temperature control in 20 hl stainless-steel vats.
Ageing
The wine matures for five months in 20 hl stainless steel, followed by at least one month in bottle before release.
Tasting profile
The colour combines new-copper, melon and raspberry-pink tones. Redcurrant and red apple lead the aroma profile, developing towards medlar. The palate opens with wild strawberry, followed by giuggiola and a salted-caramel note in an almost marine finish. Fresh acidity, precise fruit tannin and good length culminate in a pleasantly dry conclusion.
Serving and pairing
Serve at 10–12°C. Pair with cicchetti and aperitivi, Parma ham, salads—especially Niçoise—grilled chicken, pork or fish, crustaceans, fish soup, raw sea urchins, and spicy Oriental or Middle Eastern food.
