Vinification
Temperature-controlled fermentation takes place in 20 hl stainless-steel vats.
Ageing
The wine matures for five months in 20 hl stainless steel, followed by at least one month in bottle before release.
Tasting profile
A pale, soft pink reminiscent of a winter sunset. The nose is fresh, ample and persistent, combining elegant fruit with floral fragrance. Dry and rounded on the palate, it is neatly balanced and carries notes of summer fruit and nut kernels.
Serving and pairing
Serve at 10–12°C. Pair with raw fish, sushi, oysters, fish soups, delicate white-meat dishes, summer puddings or aged Parmesan.
