Vinification

The Piropo technical profile describes an 18-day fermentation in 50 hL French-oak vats.

Ageing

The 2015 Winemaker’s Release was matured in two Burgundy-oak barriques. Piropo’s general maturation regimen comprises at least 24 months in 18 hL French-oak vessels and at least nine months in bottle before release. Winemaker’s Release bottlings receive further cellar ageing and are selected only in excellent vintages.

Technical data

The 2015 release consists of 261 magnums of 1.5 L.

Tasting profile

Ruby red with garnet tones. The bouquet is elegant and spicy, with delicate, youthful fruit. Dry and balanced on the palate, it combines rich fruit with a consistent, structured and harmonious texture and pleasant background tannins.

Serving and pairing

Serve at 18 °C. Pair with pasta and meat sauces, delicate red meats such as veal or pork, marinated and grilled white meats, wild fowl, salt cod or stockfish.

Vintage notes

The Winemaker’s Release is produced only from vintages judged excellent. The bottling offered is the 2015 vintage, aged in two Burgundy-oak barriques and limited to 261 magnums.

Piropo refers to pyrope, a rare purple-toned garnet used by Renaissance writers as a poetic metaphor for Tuscan wine.
