Grapes
Sacromontino is made from Sangiovese and classified as Toscana IGT.
Vinification
The 2019 technical description specifies fermentation for approximately 14 days in 50 hL French oak vats.
Ageing
The wine matures for six months in a 50 hL stainless-steel vat, giving it a fresher, more exuberant and youthful character than the longer-aged Sacromonte.
Tasting profile
Bright crimson red with blue highlights. The nose is fresh and vibrant, with blackcurrant leaf and blackberry blossom. The palate combines taut, raspy tannins with dark berries, woodland-floor earthiness and a tangy finish.
Serving and pairing
Serve at cellar temperature or lightly chilled during summer. Pair with fresh pecorino, roast lamb (Abbacchio al Forno), sausages, melanzane alla parmigiana or pasta e ceci.

Label / history
The name plays on Sacromonte, the estate’s longer-aged Sangiovese. Sacromonte means “Sacred Mountain” and refers to Monte Amiata, regarded as a home of the gods by the Etruscans. It also recalls the mountain’s volcanic peperino stone, which was used to build the castle. The Italian diminutive “-ino” presents Sacromontino as the smaller or younger version. It is packaged in a bright-green 1 L bottle closed with a crown cap.
