Vinification
Fermentation takes place for approximately 14 days in 50 hL French oak vats.
Ageing
The wine matures for at least 24 months in 50 hL French oak vats, followed by at least nine months of bottle refinement before release.
Tasting profile
Deep ruby red in colour. The complex, refined bouquet is delicately floral, lightly spiced, elegant and ethereal. The palate is dry and medium-bodied, with balanced acidity, harmonious structure and no harsh tannins. The finish is notably pleasant.
Serving and pairing
Serve at 18–20 °C. Pair with pasta dressed with meat sauces, delicate red meats such as veal or pork, marinated and grilled white meats, and wild fowl.
Label / history
Sacromonte means “Sacred Mountain” and refers to Monte Amiata, regarded as the home of the gods by the Etruscans. The name also honours peperino, the volcanic stone characteristic of the mountain and used to construct the castle.
