About this wine

Vineyard and terroir

TreSette comes from organically managed vineyards in Gaiole in Chianti. The 2018 technical sheet records vines aged 55 years at 450–500 m, on limestone-and-clay soils. Training is by Guyot and spurred cordon, with 6,000 vines/ha and a yield of 45 q/ha.

Grapes

100% Merlot. The first vintage was 2016.

Vinification

The 2018 grapes were harvested by hand in September and selected both in the vineyard and on a vibrating sorting table. The berries were destemmed but not crushed before entering a Grenier truncated-cone French-oak vat. Plate heat exchangers and dry ice maintained a low initial temperature for cryomaceration, with only a few gentle punch-downs. Fermentation began spontaneously without added yeast. On its second day, the must underwent more than 12 hours of délestage, followed by forceful pumping over to oxygenate the mass and break the cap. Thereafter, the regime comprised a morning pump-over and an evening punch-down. Five days of submerged-cap maceration followed alcoholic fermentation.

Ageing

The 2018 technical sheet gives 30 months in three 700 L French-oak tonneaux and six months in bottle. The name TreSette refers to these three seven-hectolitre barrels.

Technical data

The 2018 has 15.00% alcohol. It was bottled in February 2022, with 2,500 standard bottles and 50 magnums produced.

Label / history

The first vintage was 2016. The name derives from the ageing arrangement: three tonneaux, each holding seven hectolitres.
