About this wine

Vineyard and terroir

The Nebbiolo comes from Cantine Rizzi’s 3 ha plot in the Pajore vineyard, at 230–300 m above sea level. The site has southern and southwestern exposure.

Vinification

The grapes are harvested during the first or second ten-day period of October, according to the weather. Fermentation and maceration take place in stainless-steel tanks for approximately 18–22 days at a controlled temperature of 30–32 °C. Malolactic fermentation lasts one month.

Ageing

The wine matures for 12–18 months in large oak casks, followed by 12 months in steel and concrete tanks. It is released three years after the harvest.
