About this wine

Vineyard and terroir

The Canale vineyard in Località Capraia covers 1.2 hectares at an average elevation of 250 metres, with varying exposures. The 15-year-old, Guyot-trained vines are planted at 4,000 vines per hectare and yield an average of 1.5 kg per plant. The soil is described as medium-textured. More broadly, the Castellina in Chianti terroir combines Pliocene-era galestro and alberese rock, forming deep, cool and stony soils.

Grapes

100% Vermentino.

Vinification

Harvest takes place in September. The wine receives a light, controlled-temperature skin maceration lasting 10–15 days.

Ageing

Maturation takes place in steel and cement.

Tasting profile

Golden and vibrant in appearance. Orange zest, Mediterranean herbs and chamomile lead the nose, joined by dried apricot and black tea. The palate is taut and saline, with a light tannic edge from the extended skin contact and a strong current of freshness. The long, citrus- and iodine-toned finish brings almond and resin nuances. The wine is unfiltered and combines freshness, savoriness, structure and minerality.

Serving and pairing

Serve at 10°C. Pair with raw or marinated shellfish, fried fish, grilled or baked fish, seafood pasta, vegetables, grilled lamb or veal, soft cheeses, and salads with arugula.
