About this wine
Vineyard and terroir
The wine draws on the best grapes selected from several estate vineyards around Gaiole in Chianti rather than from a single dedicated site. This approach is intended to express the diversity of the Gaiolese terroir. The contributing plots lie at 350–480 m with various exposures. Their medium-textured soils contain abundant rock fragments and are characterized by Alberese, Galestro and smaller limestone zones. Vines are 10–35 years old, planted at 5,000 vines per hectare and trained to spurred cordon and Guyot. Average yield is 1 kg per vine.
Grapes
Sangiovese with small additions of Foglia Tonda and Pugnitello.
Vinification
Harvest takes place in the second half of September. Maceration lasts 10–12 days at approximately 28°C, followed by malolactic fermentation in stainless steel.
Ageing
The wine matures for 12 months in large barrels, 6 months in cement and a further year in bottle.
Technical data
Annual production is approximately 20,000 bottles.
Tasting profile
Intense, bright red in color. The complex, rich nose combines small red fruits and spices, with cherry and ripe Morello cherry becoming especially prominent. Spicy and balsamic tones shape the finish. The palate is structured and enveloping, while bottle maturation contributes elegance and a mellow, persistent character.
Serving and pairing
Serve at 16°C with substantial roasts, game, mature cheeses or vegetable soups.
