About this wine
Vineyard and terroir
The fruit is selected from three different crus in Valpolicella Classico DOC.
Vinification
Healthy grapes are dried for six months in small wooden crates in a well-ventilated place, following the traditional appassimento method. The loss of moisture produces a highly concentrated, aromatic and sweet must with high alcohol content. Fermentation is halted to retain substantial residual sugar, after which the wine is filtered.
Ageing
The wine matures for 20 months in Slavonian oak barrels, followed by six months in bottle.
