About this wine
Vineyard and terroir
The estate lies in the Mezzane Valley and comprises 34 ha of vineyards. Its very stony soils and limited water availability result in very low yields, averaging 1.5 kg of grapes per vine. Planting density ranges from 2,500–3,000 to 3,500–4,500 vines/ha, depending on the variety and vine age. Only local varieties are cultivated, including small plantings of Croatina, Corbina and Oseleta.
Vinification
The grapes are selected into small 5–6 kg plastic crates and transported to the winery as quickly as possible. After passing over a sorting belt, they are divided into three batches according to ripeness and crushed. Each batch is vinified separately. Fermentation takes place in temperature-controlled stainless-steel tanks and is followed by malolactic fermentation.
Ageing
The wine matures for 12–14 months in French oak barrels of various sizes, developing balance and rounded tannins.
Label / history
The name “Saltari” refers to the protectors and guardians of the vineyards. The Saltaro was a real profession from the early 16th century until the Napoleonic era; its duties included shooting at thieves who raided vineyards. In the Verona area, Saltari remained active until Veneto and Lombardy were incorporated into the Austro-Hungarian Empire. Their historical importance and popularity inspired Sartori to use the name for both the project and the wine range.
