About this wine

Vineyard and terroir

The fruit comes from the estate’s vineyards in the Mezzane Valley. The estate comprises 34 ha of vineyards with very stony soils and limited water availability. Planting density varies with the variety and age of the vines, ranging from 2,500–3,000 to 3,500–4,500 vines/ha. Average yield is 1.5 kg per vine.

Vinification

The grapes are carefully selected, placed in small plastic crates holding 5–6 kg and transferred to humidity-controlled drying rooms. They dry for three months, losing 30% of their volume and concentrating their sugars and other compounds. Vinification takes place in temperature-controlled stainless-steel tanks for 20–30 days, followed by maceration and malolactic fermentation.

Ageing

The wine matures in French oak barrels for four years.

Label / history

The name “Saltari” refers to the historical saltaro, a guardian who protected vineyards and was required to shoot at grape thieves. The profession first appeared in the early sixteenth century and survived until the Napoleonic era. In the Verona area, saltari continued working until Veneto and Lombardy became part of the Austro-Hungarian Empire. Their historical importance and popularity inspired the name of Sartori’s project and wine range, which centres on the care of vineyards.
