About this wine

Vineyard and terroir

The grapes grow on clay-limestone soils in Salento. The vines are 15 years old on average and are harvested by hand at optimal ripeness.

Vinification

The fruit undergoes 24 hours of low-temperature pre-fermentation maceration. Fermentation takes place in stainless steel tanks at 20–22 °C for 15 days, followed by five days of post-fermentation maceration. Malolactic fermentation occurs in the same tanks.

Ageing

The wine ages for 18 months in stainless steel tanks, then rests for a further six months in the winery’s cellars after bottling.
