About this wine

Vineyard and terroir

The grapes grow on clay-limestone soils in Salento. The vines are 55 years old on average.

Vinification

The grapes are harvested by hand at optimal ripeness. Vinification takes place at a controlled temperature in stainless steel tanks, with low-temperature pre-fermentation maceration, alcoholic fermentation, post-fermentation maceration and malolactic fermentation.

Ageing

The wine matures for nine months in French oak barrels, followed by a further eight months in bottle in the winery’s cellars.
