Vineyard and terroir
The Sauvignon grows on windy, sandy soils containing some limestone.
Grapes
Sauvignon accounts for half of the crop. Torbato is an Iberian variety brought to Alghero by the Catalans long ago and is now considered local.
Vinification
The Sauvignon is harvested in early September and the Torbato during the first ten days of October. The fruit is transported to the cellar as quickly as possible after harvest. Each variety is gently pressed separately, followed by a relatively short cold maceration and 20 days of low-temperature fermentation. Malolactic fermentation is prevented.
Tasting profile
The aroma is layered, and the palate is intriguing.
Label / history
The name Thilion comes from an ancient Phoenician port north of Alghero.
