About this wine
Vineyard and terroir
The Grechetto grows in a 7-hectare vineyard at 140 metres above sea level, in the commune of Civitella d'Agliano in Lazio. The Sergio Mottura estate lies between northern Lazio and Umbria. Its 130 hectares of volcanic soil have belonged to the Mottura family for more than 70 years, though vines have been cultivated here since the 13th century. The family works with vineyards planted several decades ago; only a third are new. Farming follows organic principles, with no artificial fertilizers and no mechanical harvesting.
Vinification
The grapes are hand-picked, carefully selected and gently pressed. The must is chilled immediately to speed settling, so only clear juice goes into fermentation. Fermentation is at a low, controlled temperature and lasts 15–25 days. The estate combines traditional farming with modern winemaking technology and uses no chemical additives.
Ageing
The wine rests on its lees for 6 months in steel tanks, then spends 2 months in bottle.

The wine keeps its freshness very well for several years.
