About this wine
Vineyard and terroir
The grapes come from the Civitella Rosso vineyards. The soil there contains nenfro, a type of stone. The Sergio Mottura estate lies in Civitella d'Agliano, between northern Lazio and Umbria, on 130 hectares of volcanic soil. The land has belonged to the Mottura family for more than 70 years, and vines have been grown here since the 13th century. Most vineyards were planted several decades ago; only one third are new.
Vinification
The grapes are harvested by hand and gently pressed. The must is cooled immediately to speed the separation of sediment, so only clear juice is fermented. Maceration is slow, at 25 °C, to give the wine a mature character, soft tannins and good minerality. Malolactic fermentation takes place in steel vats. The estate farms organically, without artificial fertilizers or mechanical harvesting, and uses no chemical additives in the cellar.
Ageing
12 months in oak barrels, then 12 months in bottle.
Label / history
The name comes from nenfro, the stone found in the soil of the Civitella Rosso vineyard. The porcupine is the emblem of Mottura wines.
