Vinification

The grapes are harvested by hand, beginning with Alicante on 24 August and followed by Sangiovese from 1 September. Fermentation takes place at a controlled temperature of 28–30 °C, with 14–16 days of maceration.

Ageing

The wine ages for 12 months in 225-litre French and American oak barrels, of which 30% are new.
