About this wine
Vineyard and terroir
Selvante comes from an estate-owned plot in the Segalari district of Castagneto Carducci, in the hills above the Bolgherese provincial road. The parcel, situated at 250–300 metres above sea level, is devoted exclusively to this wine. Its clay soil is rich in stones, and the vines are trained to low spurred cordon at a density of 6,200 plants per hectare. Maximum grape production is 5 tonnes per hectare.
Grapes
100% Cabernet Franc.
Vinification
Fermentation takes place in stainless steel. Maceration lasts about 30 days at controlled temperature.
Ageing
The wine matures for approximately 32 months in toasted wooden barrels of 225 and 500 litres, with 20% turnover, followed by at least six months in bottle.
Technical data
The current presentation gives an alcohol content of 14.5%, while the 2019 technical sheet records 15.5% vol.
Tasting profile
The 2019 profile combines the force and varietal definition of Cabernet Franc with firm but unobtrusive wood-derived tannins. The expression is framed as distinctly Bolgherian while retaining a French inflection, with the local terroir softening the grape’s power.
Serving and pairing
Suited to robust flavours: red meat, mature cheese, Italian cured meats, pasta with rich red sauces, Tuscan dishes, and elaborate Italian pasta or meat preparations.
Label / history
Created in the innovative tradition of Bolgheri wine, Selvante debuted with the 2019 harvest. The project was conceived as a pure Cabernet Franc grown and made at Tenuta Campo al Mare.
