About this wine
Vineyard and terroir
The estate's vineyards lie in the heart of Tuscany, between Florence and Siena, at an altitude of around 500 metres. The soils are mainly clay-limestone. The difference between daytime and nighttime temperatures lets the grapes ripen slowly and evenly. The vines are around 20 years old on average and are farmed entirely according to organic and biodynamic standards, without pesticides or synthetic chemicals.
Vinification
The grapes are picked by hand at the ideal stage of ripeness, then gently pressed as whole bunches to give a pale must. Fermentation uses wild yeasts. Spontaneous malolactic fermentation follows and reduces the wine's acidity. The wine is not filtered, and sulphur is used only minimally.
Ageing
The wine ages for 8 months before bottling in old oak barrels, ceramic vessels and concrete.
Tasting profile
Elegant, refined and fresh, with a beautifully balanced palate. The aroma is complex, combining fruit, floral notes and citrus tones. The ageing in mixed vessels gives it excellent balance and a vibrant aroma.
Serving and pairing
Pairs with appetisers, fish and pasta.
