About this wine

Vineyard and terroir

The vineyards lie at around 500 m above sea level in the Chianti Classico area of Tuscany. The soils are complex, sandy and slate, and temperature changes in the mountains help the grapes reach a balance of ripeness and freshness. This shows in the depth and precision of the wine's sense of place. Tenuta La Novella follows organic and biodynamic principles.

Vinification

The grapes are picked and selected by hand to ensure the right ripeness and quality. Fermentation is spontaneous, in stainless steel tanks, which helps preserve the fresh berry notes. Pump-overs and stirring extract tannins and aromas, and total maceration lasts 30 days. Malolactic fermentation is also spontaneous and takes place in stainless steel tanks, softening the acidity.

Ageing

The wine is aged for 16 months: about 90% in 30-hectolitre barrels and 10% in ceramic jars. This brings out the structure without strong oak influence.

Tasting profile

Juicy and full-bodied, with refined red berry notes and a pleasant minerality. Bright acidity keeps it lively, and the firm structure gives depth. The finish is gently spicy and lingers on the palate.

Serving and pairing

Pairs with rich meat dishes, pasta and aged cheeses.
