About this wine
Vineyard and terroir
The vineyards lie at 500 m above sea level on clay-limestone soils. The vines are 12 years old on average and are cultivated according to organic and biodynamic farming standards.
Vinification
The grapes are harvested at the end of September and sorted by hand for ripeness and health. Around 30% of the harvest is vinified as whole bunches, contributing complexity and a distinctive texture. Alcoholic fermentation begins spontaneously with wild yeasts.
Ageing
The wine ages for 10 months in concrete and ceramic vessels, which soften its acidity. It stabilizes naturally over winter on its full lees before being bottled without clarification and with light filtration.
Tasting profile
Fresh and lively, with juicy red fruit, citrus notes and a balanced palate. Refreshing acidity keeps the wine bright, while whole-bunch vinification gives it complexity and a distinctive texture.
