About this wine
Vineyard and terroir
The grapes grow in galestro slate soils. The vineyard has been managed organically since 1998.
Grapes
The wine is made from a selection of Sangiovese grapes.
Vinification
The grapes are harvested and sorted by hand in the first weeks of October. After complete destemming, the whole berries macerate for 30 days to extract fresh aromas. Fermentation occurs spontaneously in stainless-steel tanks with pied de cuve, a wild-yeast starter prepared for the must. Regular pump-overs and punch-downs aid the extraction of tannins and colour. Spontaneous malolactic fermentation also takes place in stainless steel.
Ageing
The wine ages for 18 months in large 30 hL casks.
Tasting profile
Elegant and balanced, with refined minerality, lively acidity and graceful structure. Bright fruit flavours mingle with mature tobacco notes, while the nose shows apple and cinnamon. The whole-berry maceration preserves fresh aromas, and ageing in large casks contributes brightness and firm structure.
Serving and pairing
Pairs especially well with meat-based main courses.
