Vinification

Traditional red-wine vinification includes approximately 15 days of skin maceration at 28–30°C, followed by malolactic fermentation.

Ageing

The wine matures for at least six months in large oak casks, followed by several additional months in bottle to integrate its aromas and substantial structure.

Tasting profile

Intense ruby red with garnet reflections. The bouquet is balanced, with ripe fruit, spice and vanilla. The palate is soft, full, well-bodied and velvety.

Serving and pairing

Serve at 18–20°C. Pair with substantial Piedmontese recipes such as Nebbiolo risotto, ravioli with roast sauce, polenta concia and rich first courses. It also suits white and red meats, hazelnut roast and game dishes such as pheasant salmì.
