About this wine

Vineyard and terroir

Nebbiolo from organically farmed vineyards in La Morra, Roddi and Verduno, planted on calcareous clay soils. The vines are trained on vertical trellises and Guyot pruned. Maximum yield is 10 tonnes per hectare.

Grapes

Nebbiolo from organic viticulture.

Vinification

The grapes are harvested entirely by hand in October, then destemmed and crushed. Alcoholic fermentation takes place at a controlled temperature of 26–28°C, with 6–8 days on the skins and frequent pumping over. Malolactic fermentation is completed.

Ageing

The wine matures for at least six months in stainless-steel tanks before bottling.

Technical data

Minimum alcohol: 11.5% vol.

Tasting profile

Intense garnet in colour with orange nuances. The aroma combines violet, small red fruits and leather. The palate is structured and harmonious, with soft, persistent tannins.

Serving and pairing

Serve at 18–20°C. Suitable pairings include tagliatelle with meat or porcini mushroom sauce, red or white meats—including grilled preparations—game, and flavourful medium-mature cheeses. It can age for 3–5 years. Bottles should be stored horizontally in dark, cool and dry surroundings at a constant temperature.
