About this wine

Vineyard and terroir

The grapes come from vineyards in Diano d’Alba, Grinzane Cavour, La Morra, Monforte d’Alba and Roddi. Soils are mainly sandy and calcareous. Vines are trained on vertical trellises with Guyot pruning, and the maximum yield is 10 tonnes per hectare.

Grapes

100% Favorita.

Vinification

The grapes are harvested entirely by hand in the first half of September. After destemming and crushing, they are pressed in an inerted pneumatic press. Fermentation takes place in steel with selected yeasts at a low temperature of 16–18°C. Malolactic fermentation is not envisaged.

Ageing

The wine remains on its lees for at least two months, with weekly bâtonnage.

Technical data

Alcohol is 12.5% vol.; the technical specification gives a minimum of 10.5% vol. Minimum total acidity is 4.5 g/L, and minimum net dry extract is 14 g/L.

Tasting profile

Straw yellow, with floral and fruity aromas. The palate is delicate and shows good persistence.

Serving and pairing

Serve at 8–10°C as an aperitif or with light starters and fish-based dishes. This fresh wine is at its best within the year following the vintage. Store bottles horizontally in cool, dry and dark surroundings at a constant temperature.
