About this wine
Vineyard and terroir
The Nebbiolo comes from the Langhe DOC production area defined by the appellation specification. The vineyards have calcareous-clay soil and vertical trellises with Guyot pruning. Grapes are harvested entirely by hand in October, with a maximum yield of 9 tonnes per hectare.

Vinification
After destemming and crushing, alcoholic fermentation takes place at a controlled 26–28°C. Skin contact lasts 6–8 days, with frequent pump-overs.
Ageing
The wine spends 3–4 months in tank before bottling.
Technical data
Minimum alcohol: 11.5% vol.
Tasting profile
Ruby red. The bouquet offers small red fruits and spicy notes. The palate is harmonious and well structured.
Serving and pairing
Serve at 18–20°C. Pair with tagliatelle in a meat or porcini mushroom sauce, grilled and other red or white meats, game, and medium-mature cheeses. Cellaring potential is 3–5 years in bottle.
