About this wine
Vineyard and terroir
The grapes come from growing locations admitted by the Nebbiolo d’Alba production specifications. The soils are calcareous clay, and the vines are trained on vertical trellises with Guyot pruning. Harvest takes place entirely by hand in October, with a maximum yield of 9 tonnes per hectare.
Grapes
100% Nebbiolo.
Vinification
The grapes are destemmed and crushed. Alcoholic fermentation and an 8–10-day maceration take place at a controlled 26–28°C. Malolactic fermentation is completed.
Ageing
The wine matures for 14 months, with 30% aged in used wood and 70% in stainless steel.
Technical data
Alcohol: 14% vol.
Tasting profile
Ruby red. The nose combines small red fruits with spicy notes. The palate is dry, harmonious and elegant, with good structure.
Serving and pairing
Serve at 18–20°C. Pair with tagliatelle in meat ragù or porcini mushroom sauce, grilled or otherwise prepared white and red meats, game, and flavourful medium-mature cheeses. Bottle-ageing potential is 3–5 years.
