About this wine

Vineyard and terroir

Toren is a 0.6 ha Cabernet Sauvignon vineyard in Entiklar (Niclara), a locality within Cortaccia sulla Strada del Vino. It has a southern exposure and is planted at 9,000 vines per hectare, using Guyot and cordon training systems. Plantings date from 1987 onward. Yields are restricted to 25–30 hl/ha.

The loamy, sandy soil contains a high proportion of calcareous gravel. Its sandy component warms rapidly, retaining daytime heat and releasing it to the vines at night. Deep-rooted vines are less dependent on the weather patterns of an individual growing season, while the limestone component contributes pronounced berry aromas.

Grapes

100% Cabernet Sauvignon. The fruit is reserved for TOREN Riserva only in years with ideal weather and fully mature grapes.

Vinification

After harvest, the berries are carefully destemmed and cleared of foliage. Alcoholic fermentation occurs during a three-week maceration. Malolactic fermentation follows during the wine's year in barriques.

Ageing

After one year in barriques, the wine spends another six months clarifying in stainless-steel tanks. It then matures for two years in bottle. The Ad Tempus collection comprises mature vintages held under controlled cellar conditions and intentionally released after extended bottle ageing, identified by a distinctive seal. This 2015 release had developed in bottle for nearly a decade.

Tasting profile

Dark garnet in colour, full-bodied, harmonious and well structured. The complex bouquet opens with spicy tobacco before developing cassis and cranberry nuances. Fresh, clearly defined acidity supports soft, ripe tannins. The palate is powerful and the finish persistent.

After nearly a decade of maturation, the 2015 shows dried dark fruit and tobacco. Its tannins have softened, giving a smooth, balanced texture, while integrated acidity lifts flavours of ripe fruit and chocolate. The finish is long, complex and elegant.

Serving and pairing

Serve at 17–18 °C with game, steaks, roast beef or mature cheese.

Vintage notes

The Ad Tempus release is the 2015 vintage, presented in a 0.75 L bottle. Cabernet Sauvignon enters the TOREN Riserva selection only in vintages that achieve full physiological ripeness.
