About this wine
Vinification
Vinified in stainless-steel tanks, with secondary fermentation by the Charmat method. Its kosher production requires specially selected grapes from vineyards approved in advance, with prescribed procedures for harvesting, pressing, processing, cellar storage and bottling. The vines must be at least four years old, and the vineyard must rest every seventh year. No additives are permitted; any materials used in production, such as egg white, must be kosher. From the grapes’ arrival at the winery, only Sabbath-observant Jews may handle them or the resulting products.

Light and elegant, with fine bubbles and excellent balance.

Produced as a limited batch. Its kosher certification was issued by the Union of Orthodox Jewish Congregations of America.
