About this wine
Vineyard and terroir
The fruit comes from an organically farmed plot at high altitude on the northern slope of Mount Etna. The vines are old and bush-trained.
Grapes
Carricante and Grecanico form most of this field blend. The remaining varieties vary and may include Riesling, Uva Rara, Chenin Blanc, Minella Bianca, Catarratto and others.
Vinification
The grapes are harvested by hand and pressed directly as whole bunches. All varieties ferment together with native yeasts in a small stainless-steel tank, without temperature control. The wine undergoes malolactic fermentation and is bottled without fining or filtration.
Ageing
The wine ages on its lees for eight months before bottling.
