Vineyard and terroir
The grapes grow together as a field mix in volcanic soils on the northern side of Mount Etna.
Grapes
Nerello Mascalese is the principal variety, accompanied by Alicante, Nerello Cappuccio, Minella Bianca, Grecanico and Catarratto.
Vinification
The grapes are harvested by hand. Half of the wine is made in a small historic winemaking building known as a Palmento, where the grapes are foot-crushed in stone channels. A further 30% undergoes skin maceration and fermentation in Georgian Qvevri amphorae, while the remaining 20% is vinified in large oak vessels. The final blend is bottled without fining or filtration.
Ageing
All components spend 12 months on fine lees. The 20% vinified in large oak vessels is also aged in them.
