About this wine
Vineyard and terroir
The grapes are hand-harvested from two 100-year-old biodynamic vineyards on the northern side of Mount Etna. Monte Laguardia, at 800 metres above sea level, supplies 70% of the fruit. The remainder comes from Monte Pomiciaro, near Linguaglossa, whose distinctive red soils contribute a floral note and light character.
Grapes
The old vineyards are planted mainly with Nerello Mascalese, with small amounts of Nerello Cappuccio and Alicante and a mixture of local white varieties, principally Grecanico, Insolia and Minnella Bianca.
Vinification
Harvest usually begins in early October. Whole bunches are placed carefully in 10 hL food-grade plastic vats and left undisturbed for two to three days before gentle pressing. Fermentation takes place with natural yeasts in two Georgian qvevri of 1,500 and 2,000 litres. Malolactic fermentation occurs spontaneously. The wine is bottled without filtration or clarification.
Ageing
After malolactic fermentation, the wine rests on its lees throughout the winter and is bottled in March.
Tasting profile
The red soils of Monte Pomiciaro give the wine a clear floral note and a light character.
Label / history
The name “Jeudi 15” commemorates the harvest date of the wine’s first vintage: Thursday, 15 October.
