About this wine

Vineyard and terroir

The grapes grow on an organic plot on the northern slope of Mount Etna.

Grapes

The wine is a field blend of local white varieties, usually including Carricante, Grecanico, Minella Bianca, Catarratto and Inzolia.

Vinification

The grapes are harvested by hand at different times during September. Some are whole-bunch pressed, while the remainder undergo skin maceration. Fermentation occurs in stainless-steel tanks with native yeasts and without temperature control. Malolactic fermentation follows. The wine is bottled without fining or filtration.

Ageing

The wine rests on its fine lees for five months before bottling.
