About this wine
Grapes
The blend combines Cabernet Sauvignon and Cabernet Franc, both brought to Friuli from France.
Vinification
Before pressing, the grapes are chilled with dry ice, then pressed in pneumatic presses. Fermentation takes place partly in temperature-controlled stainless-steel tanks and partly in small oak barrels.
Ageing
The wine rests briefly in small oak barrels and stainless-steel tanks.
Tasting profile
Refined, with a well-defined tannin structure. With maturation, it becomes more elegant and develops a more complex bouquet.
Label / history
The earliest document recording wine production at the estate dates from the seventeenth century. In 1970, Volpe Pasini began an intensive research programme and subsequently introduced new winemaking technologies.
