Vineyard and terroir
The grapes come from vineyards in the Togliano area.
Vinification
The grapes are harvested in early September and carefully selected before fermentation in neutral vessels at a controlled temperature.
Ageing
The wine rests briefly in neutral vessels after fermentation. Its stated drinking window is 2012–2013.
Tasting profile
With time, the wine becomes more complex and refined while retaining its characteristic Chardonnay aromas and flavours.
Serving and pairing
Long-stemmed, tulip-shaped glasses are recommended.
Label / history
Volpe Pasini is based in the heart of Colli Orientali del Friuli. Its estate includes a manor house built in 1596, surrounding buildings, a park and a Ribolla vineyard, covering more than 20,000 m² in total. The earliest document recording wine production at the estate dates from the seventeenth century. In 1970, the winery began an intensive study of new winemaking technologies, which it subsequently adopted.
