Vineyard and terroir
Baudana is a historic cru in Serralunga d’Alba. The wine comes from a 0.7 ha estate vineyard with a southern exposure. The technical sheet places it at 280 m above sea level and identifies the soil as Elveziano; the vineyard profile gives an altitude of 300 m and describes the geology as Serravalliano–Formazione di Lequio. The vines are approximately 35 years old and derive from massal selection.
The vines are trained on a counter-trellis and pruned medium-short Guyot. Average planting density is 5,000 vines per hectare, while cluster thinning restricts production to 1 kg per vine.
Grapes
100% Nebbiolo from massal selection.
Vinification
Fully ripe grapes are harvested into small, perforated 20 kg crates and rigorously sorted by bunch. Transport to the cellar and crushing occur within a few hours. Indigenous yeasts conduct fermentation at approximately 32°C under temperature control, with repeated, gentle pump-overs. Skin maceration averages 350 hours. The young wine is transferred to wood for spontaneous malolactic fermentation.
Ageing
Maturation lasts 24 months in oak, followed by approximately 6 months in bottle.

Alcohol: 14.5% vol. Total acidity: 6 g/l. Residual sugar: 2 g/l. Net dry extract: 30 g/l.
Tasting profile
Ruby with orange reflections. The expansive, ethereal nose combines yellow flowers, ripe white peach and dried apricot. Silky, fragrant tannins persist through a savoury palate marked by the mineral character associated with Serralunga.
Serving and pairing
Store the bottle horizontally and serve at 18–20°C. Pair with porcini mushroom risotto, lamb or long-matured cheeses. The stated ageing potential is at least 10–15 years from harvest.
