Vineyard and terroir

The wine combines fruit from Sorano and Costabella, two historic crus in the commune of Serralunga d’Alba covering 1 ha in total. The old vines, planted with a massal selection of Nebbiolo, are more than 80 years old. They grow on Serravallian soils of the Lequio Formation. The vines are trained on counter-trellises and pruned to medium-short Guyot. Average planting density is 5,000 vines per hectare, while cluster thinning limits production to approximately 1 kg per vine.

Grapes

100% Nebbiolo from a massal selection.

Vinification

Fully ripe grapes are placed in small, perforated 20 kg crates and subjected to rigorous bunch selection. They reach the cellar and are crushed within a few hours. Fermentation takes place at a controlled temperature of approximately 30°C, accompanied by repeated, gentle pump-overs. Skin maceration lasts approximately 350 hours. The young wine then enters wood, where spontaneous malolactic fermentation takes place.

Ageing

18 months in oak casks.

Alcohol: 14% vol. Total acidity: 5.4 g/L. Residual sugar: 2 g/L. Net dry extract: 30 g/L.

Tasting profile

Deeply coloured, with a chalky, polished tannic weave. The broad, profound nose centres on dark fruit, developing tobacco nuances as the wine matures.

Serving and pairing

Serve at 18–20°C. The wine can mature for 10–15 years from harvest. Pair with strongly flavoured yet refined dishes, including red meats, game, truffle recipes, blue cheeses and mature cheeses.
