Vineyard and terroir

This Riserva unites Nebbiolo from Preda and Cannubi, two principal Barolo crus. The vines are counter-trellised and medium-short Guyot pruned, at an average density of 5,000 vines/ha. Cluster thinning limits production to approximately 1 kg per vine.

Grapes

100% Nebbiolo.

Vinification

Fully ripe bunches are harvested into perforated 20 kg boxes and subjected to rigorous selection. They reach the cellar and are crushed within a few hours. Fermentation takes place at approximately 32°C under controlled temperature, with repeated gentle pump-overs. Maceration averages 400 hours. The young wine then enters wood, where spontaneous malolactic fermentation takes place.

Ageing

Maturation lasts 48 months in oak, followed by bottle ageing.

Technical data

Alcohol: 14.5% vol. Total acidity: 5.4 g/l. Residual sugar: 2 g/l. Net dry extract: 30 g/l.

Tasting profile

Ruby red with broad brick-coloured highlights. Balsamic aromas of medicinal herbs, incense and sweet liquorice mingle with very ripe cherry. The broad palate develops tar, caramel and sour-cherry notes. Fine-grained tannins are velvety and powerful yet sweet, balancing the acidity and giving the wine a long-lived structure.

Serving and pairing

Store horizontally and serve at 18–20°C. Pair with red meats, game, white truffle or blue cheeses. Cellaring potential is 15–20 years from harvest.

Label / history

The wine is dedicated to the life companion who encouraged, advised and helped build the producer’s dream. Its Riserva identity is founded on the union of Preda and Cannubi.
