Questo vino
Vineyard and terroir
The fruit comes from selected old vineyards at 100–300 m in the Alpone Valley, within the commune of Monteforte d'Alpone in eastern Soave. The sites have a favourable south-east exposure, and growers substantially reduce yields in pursuit of concentrated fruit. Marl and limestone soils place the vines under stress. The vines average 20–30 years of age and are trained to both Pergola Veronese and Guyot.
Grapes
100% Garganega.
Vinification
The grapes were picked by hand, destemmed, crushed and chilled without added sulphur. They were then gently whole-bunch pressed in a pneumatic press. After natural settling and racking, cultured yeast was added to initiate fermentation at 12–16°C in 1,200 hl stainless-steel tanks.
Ageing
The wine remained in the same stainless-steel tanks until it was fined, filtered and bottled.
