Vineyard and terroir
Mosaico draws on the estate's organically cultivated red-grape vineyards on the Rocca Ripesena hill near Orvieto, at an altitude of 300 m. The predominantly clay-rich and sedimentary terrain contains volcanic rock associated with the formation of Lake Bolsena. The vineyards are not irrigated, encouraging deeper rooting toward the volcanic material.
Grapes
A selection of the estate's best red grapes, vinified as white wine. The original introduction described Mosaico as a blend encompassing the estate's red-grape production.
Vinification
The grapes are taken from an early harvest performed while thinning the red varieties and are vinified as white wine. The current classification is V.S.Q. Metodo Classico Rosato Brut.
Ageing
The Italian text in the current technical sheet specifies 9–12 months on the lees from tirage and several months in bottle after disgorgement. Its English text instead gives six months on the lees.
Tasting profile
Delicate onion-skin pink, with a fine, minute and persistent perlage. The nose combines appealing fruit and floral notes. The palate is elegant, fragrant and harmonious, with good savoury minerality.
Serving and pairing
Serve at 6–8°C. Suitable as an aperitif and with appetizers, fried foods, crudités, fish, savoury pies and light seasonal-vegetable dishes.

Mosaico was announced for release in autumn 2022.
Label / history
The name reflects the idea of assembling a mosaic from the estate's different red grapes.
