Vineyard and terroir
The grapes come from organically cultivated estate vineyards on the Rocca Ripesena hill near Orvieto, at an altitude of 300 m. The predominantly clay-rich and sedimentary terrain contains volcanic rock associated with the formation of Lake Bolsena. The vineyards are not irrigated, encouraging the roots to descend toward the underlying volcanic material.
Grapes
Procanico (Trebbiano Toscano) and Chardonnay.
Vinification
A Brut sparkling wine produced by the traditional method, with the production process described as manual.
Ageing
The wine remains on its lees for 15–18 months from tirage and rests for several further months in bottle after disgorgement.
Tasting profile
Light straw yellow with green reflections. The nose is fine and marked by citrus fruit and white flowers. The palate is vibrant and fresh, with pleasant acidity and medium structure. Its fine perlage is persistent and refined.
Serving and pairing
Serve at 6–8°C. Pair with seafood crudités, fried vegetables and moderately salted rich foods; it can also accompany an entire meal.
Label / history
Rilievo was introduced as a new traditional-method sparkling wine made from Trebbiano and Chardonnay. Its name refers to the numerous bas-reliefs decorating the façade of Orvieto Cathedral.
