Vineyard and terroir
The 3-hectare Elzana cru lies at 150 m above sea level with a southern exposure. Its soils combine clayey schist, locally called galestro, with clay. Located in a valley, the vineyard experiences cold winters, fresh summers and a wide difference between daytime and nighttime temperatures. It is the estate’s latest-ripening cru. The vines were planted in 1975 at 3,300 plants per hectare and are Guyot-trained. Viticulture is certified organic. Average wine yield is 35 hl/ha.
Grapes
90% Sangiovese and 10% Uva Francesca, the traditional local name used for Cabernet.
Vinification
Maceration lasts 20–25 days on the skins under temperature control, with délestage and pump-overs. Malolactic fermentation follows.
Ageing
The wine matures for two years in wood: one year in French oak tonneaux of 3.5 and 5 hl, then one year in 25-hl Slavonian oak casks. It is subsequently aged in bottle for one year.
Technical data
Average production is 4,000 bottles per year in 0.75-L format.
