Vineyard and terroir
Montalbiolo is the estate’s highest cru, at 200 m above sea level. The technical sheet gives the vineyard a south-eastern exposure and describes soils of clayey schist, locally known as galestro, and sandstone. The vines were planted in 1972 at a density of 3,300 plants per hectare and are trained to Guyot. Viticulture is certified organic. Average wine yield is 35 hl/ha.
Grapes
70% Sangiovese, 20% Canaiolo Nero and 10% Uva Francesca, the traditional local name used for Cabernet.
Vinification
The must remains on the skins for 20–25 days under temperature control. Délestage and pump-overs are used during maceration, followed by malolactic fermentation.
Ageing
Maturation lasts two years in wood. The first year is spent in French oak tonneaux with capacities of 3.5 and 5 hl; the second is in 25-hl Slavonian oak casks. The wine then receives one year of bottle ageing.
Technical data
Average production is 4,000 bottles per year in 0.75-L format.
Tasting profile
The Montalbiolo cru is associated with an elegant, refined style. Its grapes ripen late, after those of Elzana.
