Vineyard and terroir

The production area extends across Milo and Castiglione di Sicilia. Vineyard yield is 50 hl/ha. The meeting of southern warmth with mist, wide temperature shifts and frequent rain shapes the wine’s fresh, mineral character.

Grapes

80% Nerello Mascalese, with a combined 20% Nerello Cappuccio and Nerello Mantellato.

Vinification

Fermentation takes place in stainless steel with 6–10 days of skin maceration.

Ageing

The wine rests for 12 months in 500 L chestnut barrels and is bottled 18 months after harvest.

Tasting profile

Bright, fluid ruby red. Floral notes of violet and fresh woodland fruit are followed by light herbal nuances. The palate is tannic without aggression, its tannins balanced by pronounced acidity, fresh persistent fruit and minerality. The chestnut ageing softens the wine’s delicate fruit, herbal and berry character.

Serving and pairing

Serve at 18 °C. Pair with sliced red meat or tuna, roasted meat and fish, Nebrodi cured meats, and sweet-and-sour dishes. It is ready to drink upon release and may be kept for up to 15 years from the vintage.
