Vineyard and terroir
The grapes grow in vineyards in the heart of Franciacorta DOCG. The vineyards are planted at 5,000 vines/ha, and the vines have an average age of 25 years.
Vinification
The grapes are harvested by hand at optimal ripeness, usually from late August to the first days of September. Of the base wine, 37% is placed in pièces—228 L Burgundy barriques—and 63% in steel tanks. The wine undergoes its second fermentation by the traditional method.
Ageing
The base wine rests partly in 228 L Burgundy barriques (37%) and partly in steel tanks (63%). The sparkling wine is subsequently aged on its lees in bottle for at least 36 months.
