Vineyard and terroir
The grapes come from estate properties between Castelnuovo Calcea, San Marzano Oliveto and Rocchetta Tanaro.
Grapes
Barbera, Merlot, Cabernet Sauvignon and Cabernet Franc. Blend proportions vary by vintage. Each variety is harvested and vinified separately according to its ripeness, beginning with Merlot, followed by Barbera, Cabernet Franc and finally Cabernet Sauvignon.
Vinification
The grapes are picked by hand and undergo a further selection by experienced staff. Destemming and gentle crushing preserve berry integrity and help prevent unwanted herbaceous notes. The varieties ferment separately in steel vats under controlled-temperature conditions. Pump-overs take place daily, approximately every eight hours, while about two délestages are performed during the first 15 days. The overall fermentation and extraction period lasts approximately three weeks.
The component wines are then racked into barriques, where colour stabilisation and malolactic fermentation take place.
Ageing
Each component spends 12 months in barriques selected for its particular character, followed by 12 months in large casks. Careful tasting determines the final blend, whose proportions may vary each year. After blending, the wine matures in bottle for at least 12 months.
Serving and pairing
Serve at 16–18°C. Available in 0.75 L, 1.5 L, 3 L, 5 L and 12 L formats.
Label / history
In Piedmontese dialect, a “Bacialé” is a matchmaker who arranges marriages. The name presents the wine as an arranged marriage between the Bologna family’s beloved Barbera and Merlot, Cabernet Sauvignon and Cabernet Franc—a union conceived to age well.
