Vineyard and terroir

The fruit comes from the Paronza vineyard in the Castellina area. Casale dello Sparviero’s vineyards lie at approximately 250 m above sea level, among the hills around Castellina in Chianti, in the Siena sector of Chianti Classico. Woodland and shrubs surround the vineyards, while their position in a ravine helps maintain a balance between moisture and warmth.

The estate has 90 ha under vine within a total area of 380 ha. Over a four-year period, more than two-thirds of its vineyards were replanted at high density and placed under a new management system focused on modern growing techniques and low yields. The harvest undergoes strict selection.

Vinification

The grapes are harvested in mid-September. Traditional vinification takes place at a controlled temperature with pump-overs.

Ageing

The wine matures for 18 months in French oak barrels, followed by six months in Slavonian oak barrels and at least 12 months in bottle.

Label / history

The Andrighetti family, also the owner of Fattoria Campoperi, acquired the 380 ha “Il Casale” estate in 1996 and began restoring it. Existing vines of native varieties, particularly Sangiovese and Canaiolo, were preserved, while Cabernet Sauvignon and Merlot were introduced. Winemaker Attilio Pagli and agronomist Stefano Porcinai assisted the estate’s young team. The 17th-century manor house now accommodates the offices and ageing cellars, which contain large oak barrels and modern French barriques. Estate production is approximately 100,000 bottles per year.
