Vineyard and terroir
The selected fruit comes from a small vineyard in Chianti Classico. Casaloste’s vineyards are farmed organically and use biological pest control, supporting beneficial insects, fungi and viruses to keep harmful species below economically damaging levels. The estate follows a policy of low production per hectare and continuously monitors grape quality.
Grapes
The grapes are selected before vinification.
Vinification
Fermentation takes place in neutral vessels. Malolactic fermentation follows in French oak barriques, with Giovanni Battista d’Orsi overseeing the process.
Ageing
The wine matures for 16 months in barriques and a further six months in 25- and 35-hectolitre barrels. After bottling, it rests for 12 months in the winery’s cellars.
