Vineyard and terroir

The grapes grow in vineyards around the village of Panzano, in the southern part of the Classico area. Casaloste farms its vineyards organically, using biological pest control to keep harmful species below economically damaging levels while supporting beneficial insects, fungi and viruses. The estate follows a policy of low yields per hectare and continuously monitors grape quality.

Grapes

A blend of Sangiovese, Canaiolo and Merlot.

Vinification

The grapes are harvested by hand into small containers, then destemmed and crushed. The must ferments with yeast in stainless-steel tanks at 26–28 °C, with regular stirring.

Ageing

The wine matures for 10 months in large French oak barrels.

Label / history

Fattoria Casaloste was founded in 1992 by Giovanni Battista d’Orsi and his wife, Emilia. The family-run estate lies near Florence and comprises 10.5 hectares of vineyards as well as an olive grove. Annual production is 60,000 bottles. Giovanni personally oversees production from the harvest through barrel ageing, working with the winery’s enologist, Gabriella Tani.
